is under new ownership!

The Watch That Ends the Night has recently undergone a change in ownership. Bethany & Joe Gurba, the original owners of The Watch, have decided to step away to focus on their young family. Chef Mark Gray is now the new owner.

Gray was originally approached by Bethany & Joe Gurba in May of 2017 to be the Head Chef of The Watch That Ends the Night when they had learned he was leaving his position at Battery Park Beer Bar & Eatery. Within 12 hours of their first meeting, Gray had signed on to the project. Since then, Gray has shaped the kitchen, originally focusing on a multi-faceted preserves program of cured, fermented and pickled items. 

Over the past few months the menu has expanded to include more traditional restaurant fare. It is Gray’s intention to make The Watch That Ends the Night a dining destination rather than a strictly cocktail focused establishment. That notion has already started to get focus as The Watch recently placed 5th in The Curated Guide’s “25 Best Places to Eat in Nova Scotia.” “When I was first approached about the project, it was our understanding that the kitchen would have to be a “cold” kitchen due to the limited space. After opening, we began to push the kitchen as far as we could to allow more traditional restaurant offerings alongside our many preserved items,” says Gray.  

Gray will keep the name, The Watch That Ends the Night, and the overall look of the physical space nearly the same. The cocktail and spirit menus will remain as inventive and exciting as ever, while expanding to offer a more extensive beer and wine program. These programs will highlight the incredible craft beers and wines Nova Scotians are producing here at home. 

Under Gray’s management, The Watch will be pivoting to establish itself as more of an everyday, neighbourhood restaurant & bar, rather than a space only designed for a special night out. “Many people consider this place to be upscale, and only visit on a birthday or anniversary. They can still do that, don’t get me wrong, but I want people to come any day of the week. Monday’s will be 90’s martini night. Tuesday will offer $6 draught and a $9 burger that changes every week. Wednesday will continue to offer live jazz with no cover charge. Thursday is 25% off spirits night for those who like their back shelf spirits served straight. On Friday & Saturday they can join us for  after hours drinks, and Saturday & Sunday for brunch. We want to offer something for everyone in an approachable and affordable way. I do not want to be seen as “upper class" or unapproachable, because thats not what my intentions are for this establishment moving forward. Who we are at our core will remain much the same, but we’ll be adding more comforting offerings and friendlier food and drink prices.”

With his new role as Chef/Owner, Gray will be moving into an Executive Chef position to focus on the restaurant’s concept and operations more broadly. Janie Bogardus, Gray’s Sous Chef since opening, has been appointed the new Head Chef, although Gray will continue to play a pivotal role in the restaurant’s menu development and special events. The current staff structure of The Watch will remain intact, with Riley Maggs at the helm of the bar curating the spirits program, Coady LeBlanc appointed to marketing and curating the beer program, and Griffin Cox curating the wine list. Collectively, the three will continue to curate the cocktail program. As regulars to The Watch know, the food and drink menus continually evolve. Under Gray’s administration they will continue to do so with the same gusto. 

Also behind Gray is a phenomenal support system through his family; specifically his fiancé, Alissa Maloney, and his father, David Gray. Alissa will bring her 20 plus years of service knowledge and experience to the table, helping implement programs and structure to the already strong front of house at The Watch. His father will bring his background in finance as a CPA, CMA to his side, handling all things accounting on the back end of the business. 

Finally, Sidecar Goods, the retail space at the front of the restaurant, will be moving to make way for a private dining space (Bethany and Joe Gurba have decided to relocate their foodie gift shop to Le Marché Fruit Boutique at 49 Kings Wharf, two doors down from The Watch). Parties of 6 - 12 can rent out this stunning new dining room for an endless range of occasions and needs. The space is great for anything from a lunch-in business meeting to a 7-course tasting menu dinner any day of the week. “When I first saw the space, my mind immediately went to private dining. The space has an incredible view of the Halifax skyline, and having the mahogany partition around two of its walls, it still feels like you are in the restaurant but gives you privacy and intimacy like no other place within the restaurant.” After a small set of renovations the space will be open for bookings as of June 1st.

More on Chef Mark Gray, RSE:

Born in Halifax, Nova Scotia, Gray has been working in the culinary industry since the age of 16. 

He began his career by washing dishes at the then-new Il Mercato in Bedford, NS, under Chefs Maurizio Bertossi & Martin Ruiz Salvador. After graduating from high school at the age of 18, he moved west to Canmore, Alberta.  There he became Sous Chef at The Drake Inn, while also working under Chef Michael Lyon at The Wood Steakhouse & Grill.  Moving back to Halifax in 2009, at age 20, Gray took the co-Executive Chef position at The Hilton Garden Inn, Halifax Airport, alongside Chef Brenan Madill. After 9 months, he decided to take a step back to focus on learning the craft. It was then that he began working under Chef Graeme Rupple at The Brooklyn Warehouse. 

In May 2011, at age 23, Gray earned his Canadian Red Seal Certification and also completed the Culinary Arts program at the Nova Scotia Community College, Akerley Campus. In June 2011, he became Head Chef at The Brooklyn Warehouse. 

During his stay at Brooklyn Warehouse, the restaurant took the titles of;

  • “Best Restaurant - Halifax” The Coast’s Best of Food Awards 2011, 2012, 2013, 2014, second runner-up in 2015 and first runner-up in 2016
  • “Best Restaurant – Chef Inspired Casual Fine Dining” Taste of Nova Scotia Prestige Awards in 2014
  • “Restaurant of the Year” in The Chronicle Herald in 2014

Brooklyn Warehouse Groups second endeavour, ACE Burger Co., took the titles of;

  • The Coast’s “Best Burger, Halifax” in 2013, 2014 & 2015

His third project within the group, Battery Park Beer Bar & Eatery, was named;

  • “Best New Bar” The Coast’s Best of Food Awards in 2016
  • “Establishment of the Year” by the Nova Scotia Association of Chefs & Cooks in 2016

Independently, Gray has won;

  • Gold in Nova Scotia at the prestigious Gold Medal Plates competition in 2016
  • 4th place at the Canadian Culinary Championships in Kelowna, B.C in 2017

Our focus is on innovative Canadian cuisine, house-made charcuterie, expertly crafted cocktails, and a thought-provoking well curated wine list. The Watch That Ends the Night is located in King’s Wharf in Downtown Dartmouth, south facing, with an incredible panoramic view of the Halifax skyline and harbour. The room comfortably seats up to 50 dining guests with ample standing room and soft seating for up to 85 in all. We have a cocktail and wine focused beverage program with a large selection of medium-to-high end spirits (over 180 boles), a 35-bottle wine list and several draught and bottled beer and cider options. Our food program has a focus on preservation, small and large format sharing platter options and a 12–15 item ever-changing menu of locally sourced, seasonal Canadian cuisine. The Watch’s décor is inspired by mid-century North American hotel lounges overlaid with the aesthetic of Canadian paperback novels – mahogany, dark blues, light greens, many plants and mirrors. Low level lighting with lots of natural sunlight or starlight shining through our floor-to-ceiling windows that encapsulate the space. Our soundtrack is inspired by 1920’s – 1960’s hotel lounges – blues, jazz, motown, funk and swing fill the speakers. Overall, the vibe is relaxed and upbeat, yet refined. Lounge areas, banquettes, soft seating and communal seating bring the room together for entertaining throughout the day or night.

The Watch can host up to 80 guests offering the best in cocktails, wine, spirits, and beer alongside a host of charcuterie, hot and cold canapés, hors d’oeuvres and sharing platter options tailored to your needs.

Our Chef, Manager, and Head Bartender will sit down with you to determine a customized menu based on each party’s budget and needs, as specialized or as free-form as best suits each event. We can also coordinate with you to arrange entertainment. 

Venue is available for buy-out; pricing varies based on individual needs and day of the week.

A seasonal, customized menu from the chef featuring adventurous and/or comforting fare, raw seafood selections, house made salumi and preserved vegetables that is designed to compliment any occasion for brunch, lunch or dinner service.

Off-site Catering: The Watch that Ends the Night will bring the restaurant to you, fully customized to accommodate a private dinner for up to 15 guests, a canapé reception for up to 150 guests or a vineyard reception for up to 500. Pricing varies based on individual needs.
